
Easter Salad Is Spring Side Dish Perfection
In this Easter salad recipe, we’re not ashamed to admit the dressing is really the star of the show. It is bright and punchy, thanks to rice vinegar instead of a more traditional lemon juice. Dijon is added to emulsify the dressing so it will beautifully coat every leaf and vegetable slice. Feta adds richness, saltiness, and some creaminess to what is otherwise a very veg-forward salad. (Don’t mind us if we double the cheese.) Finally, orange and fresh mint wrap everything together nicely with a sweet, citrusy flavor that really makes this salad far more special than just any ordinary side.
