Navratri fasts are about to begin and many people are gearing up to fast on all nine days. One of the dishes you can incorporate in your fast is Sabudana Rabri, a delightful and tasty option. It is light, sweet, and absolutely delicious. It also provides enough nutrients and energy to avoid falling ill during the Navratri fast. Here is the recipe to prepare this flavourful dish.

Ingredients

  • 1 cup sabudana (soaked in water for 30 minutes)
  • 1 litre milk
  • ½ cup sugar (adjust as per taste)
  • ¼ teaspoon cardamom powder
  • 10-12 almonds (chopped)
  • 10-12 pistachios (chopped)
  • 1 tablespoon raisins
  • 1 tablespoon ghee (for frying sabudana)

Sabudana Rabri Recipe

  1. Wash the sabudana thoroughly and soak it in water for 30 minutes. Strain and set aside.
  2. Pour the milk into a pan and bring it to a boil. Reduce the heat and simmer, stirring continuously, until it reduces to half, preventing it from burning.
  3. Heat ghee in a pan and add the soaked sabudana. Roast it lightly over a medium flame for 3-4 minutes until it softens.
  4. Add sugar to the boiled milk and mix well. Then, add the roasted sabudana and stir. Cook on a medium flame until the sabudana absorbs the milk and the mixture thickens.
  5. Once thickened, add cardamom powder, chopped almonds, pistachios, and raisins. Mix well.
  6. Remove the rabri from the heat and let it cool slightly. Refrigerate for a while for a chilled version. Garnish with chopped nuts and serve.
