The Sheet Pan Supper That Made Me Actually Enjoy Cooking On A Weeknight



It’s hard to find a weeknight dinner that really knocks it out of the park for my family. It has to be easy to make (and on the table before 7 p.m.), inexpensive, something everyone will actually eat, and quick to clean up. That’s a lot of boxes to check! So when I actually do find a recipe that can do all of those things and more—like our Sheet Pan Greek Chicken with Roasted Potatoes—I want to share it with everyone I know.

Why Sheet Pan Dinners Are Weeknight Heroes

Lately, sheet pan suppers have been my go-to for busy weeknights because I can easily incorporate more vegetables into our meals and they’re a cinch to clean up. In this dish, the chicken and vegetables cook together on the sheet pan, which makes everything more flavorful. The potatoes absorb the fat from the chicken, the lemon infuses the chicken with citrusy brightness, and the herb-and-spice rub makes it all smell and taste amazing. 

Then, when dinner’s done, all we have to wash is the pan itself (or you can line it with aluminum foil for even easier clean up) and our plates. 

Sheet Pan Dinners Are Easy To Customize

One of my favorite things about sheet pan suppers is their flexibility. Prefer dark meat over white? Swap out the chicken breasts for bone-in thighs. Hate olives? Leave them off. Trade the tomatoes for diced bell peppers. Use cubed eggplant instead of potatoes. As with any substitutions, you’ll need to keep a closer eye on the cook time to make sure everything is not over- or undercooked, but you can easily tailor the recipe to your family’s taste.
