You still get the same top-quality cookware with comfortable handles and a sleek stainless finish that looks good sitting out on the stove. “This cookware line is precisely the type of cookware I use in my restaurant kitchens,” Boulud says. He also said he uses copper cookware in his kitchens because it’s perfect for certain delicate cooking tasks, but copper is less versatile and requires more maintenance than stainless steel. “Stainless steel is a better choice for everyday home use,” he says.

If you make eggs, pancakes, or anything delicate, this is the pan you want. The nonstick pan makes flipping and sliding food out easy, and the edges are shaped so you don’t make a mess when serving. Just remember, never put this in the dishwasher, and always hand-wash nonstick.

This pan quickly became my favorite out of the collection — I love its shape. It was perfect for soups, sauces, and braising smaller cuts of meat. It’s also one of Boulud’s favorites. “If I had to pick just one piece [from the new collection], I’d probably say the stock pan or saucepan because I love making soup and could eat soup every day,” Boulud says.

This pan is a solid everyday workhorse. I used it to sear a couple of steaks on the stovetop and then finish them in the oven. I was even able to reach into the oven with a towel and grab the curved handle without burning my hand on the rack, an unfortunate occurrence from my days working in the kitchens that sometimes happens with regular steel pans.

Need more space? This bigger frying pan gives you room to cook without cramming everything together. Whether you’re browning meat or tossing veggies, it stays balanced and easy to handle. “The goal was to create cookware that is suitable for high-end restaurant kitchens but friendly to use for home cooks of all levels,” Boulud says. So, even if you’re not a pro, this pan makes you feel like one.
