A small, unassuming sweet shop in the bustling district of Uttar Pradesh’s Ballia has become a culinary landmark, drawing crowds from miles around for its legendary Rasmalai. With a recipe that has stood the test of time, this 15-year-old establishment has captured the hearts, and taste buds, of sweet lovers, selling an astonishing Rs 35,000 worth of Rasmalai every single day.

Kamdhenu Sweets, located near the Satish Chandra College crossing, has earned a reputation for its pure, desi flavours that keep customers coming back for more. Despite filling the stomach, patrons say the sweet leaves them craving another bite.

The fame of this shop’s Rasmalai is not confined to Ballia alone. Sweet enthusiasts from surrounding towns like Bairia, Rasra, Sikandarpur, Buxar, Haldi, Maldepur, Sagarpali, and Belthara Road regularly make the trip to indulge in the delicacy. The shop churns out nearly 1,000 pieces daily, totalling around 30,000 pieces every month. Priced at just Rs 35 per piece, the sheer volume of sales earns them around Rs 10.5 lakh monthly.

Shop owner Umesh Shah takes immense pride in the quality of his Rasmalai. He insists on using only the finest natural ingredients – pure cow and buffalo milk, turmeric, saffron, and cardamom – to achieve the perfect balance of flavour and texture.

The process itself is labour-intensive. The milk is boiled until it reduces to half its volume, creating the rich, flavourful base. The chenna, made by curdling milk, is kneaded to a smooth consistency, shaped into delicate discs, and then cooked in sugar syrup before being soaked in the fragrant milk reduction. A final touch of dry fruits adds to its irresistible appeal.
